My friend Millie believes that a meal of Ugali and Sukuma wiki is the ultimate mark of being broke. I think she is just a diva. My love for vegetables is dangerous, if you do not like me, you can easily poison me using cabbages. So I know you are also thinking Sukuma Wiki is too plain to be eaten plain. This is why I exist, so you can prosper in your kitchen. This recipe is not only orgasmic; it is legendary (Captain Jack Sparrow’s Voice)
INGREDIENTS
Sukuma Wiki (Cut it in whichever way you like)
Onions (rings preferably)
Tomatoes (rings preferably)
Chili Cloves (finely chopped)
Salt
Cooking oil
Water
Milk
Cream/ Ghee (Optional)
PREPARATION
Put your sukuma wiki in a sufuria and spread it evenly. On top, spread out onions, tomatoes, chili cloves, sprinkle salt and spew cooking oil.
Now add about 200 ml of water and cover. Place on medium heat and let everything simmer.
Once your sukuma wiki dries out and it begins to burn slightly, mix in all ingredients. Fry the sukuma wiki for about 30 seconds. I believe it looks mixed well.
Now add milk, cream and/ or ghee, mix a little and then cover on low heat for about 3 minutes. Keep checking to see if the sukuma is drying up. Add a little heat and mix until it all looks pasty
Turn off your cooker and serve while hot. Goes well with ugali or spaghetti.
Servings and amount of ingredients depends on how much sukuma wiki you are cooking. It is good to note that, onions, milk and cream are the most important for better taste.
I tried this tonight…welcome change but the 200ml of water is too much; turns kales slightly brown before water dries. Had to strain
